PUMPKIN ROLLS

INGREDIENTS:
3 large eggs
1 cup sugar (granulated)
2/3 cup mashed cooked pumpkin ( I use the Libby canned)
1 teaspoon fresh lemon juice
3/4 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1/4 tsp nutmeg
1 cup chopped pecans
1 to 2 tablespoons powdered sugar
1 - 8 ounce pkg cream cheese, softened
1/3 cup butter or margarine, softened
1 cup sifted powdered sugar (yes again)
1 teaspoon vanilla extract
Garnishes: whipped topping and/or chopped pecans
*Grease and flour a 15x10 inch jellyroll pan and set aside
*Beat eggs in a large bowl at high speed with electric
mixer until thick and pale;
gradually add 1 cup granulated sugar, and beat 5 minutes.
Stir in pumpkin and lemon juice.
*Combine flour and next 5 ingredients; gradually stir
into pumpkin mixture.
Spread evenly into jellyroll pan; sprinkle with 1 cup of pecans
(I use double the amount of pecans here)
Bake at 375 degrees for 12 minutes. ( I have found that
it takes a little longer.
I usually cook it about 2 more minutes.)
*Sift 1 to 2 Tablespoons of powdered sugar in a 15x10
inch kitchen towel.
(I use more sugar here too.You don't want your cake to stick to the towel.)
When cake is done, Immediately loosen from sides of pan, and turn out
onto sugared towel.
(FLIP IT OUT VERY QUICKLY OR IT WILL FALL APART!!!)
Starting at end, roll up cake and towel together; cool
completely on a wire rack with seam side down.
~VERY IMPORTANT TO COOL COMPLETELY~
*Beat cream cheese and butter in a bowl at high speed;
gradually add 1 cup powdered sugar and vanilla, beating until blended
*Unroll cake, and remove towel. Spread with cream cheese
mixture, and carefully re-roll without towel.
I use the towel to guide it . Place cake on plate seam side down. Store
in refrigerator.

(YIKES!!) Cholesterol 132 mg - Sodium 310 mg*
*I store it in aluminum foil folded tightly around the
cake so that it chills very tightly together and doesn't fall apart.
